Hi to you all! I´m a new guy here =)

I was wondering: I want to expand the Labjack U12 with extensioncard CB25. (For higher voltage measurment than +-10v for analog signals).

If i use the CB25 extension (designed for up to 25v), will i still get the measuringfrequency for a "stream"-measurent with 1,2 kHz or will it decrease the performance?

The CB25 does not have any effect on analog inputs.  The CB25 is simply a breakout board for the 16 digital I/O on the U12's DB25 connector.
