We wanted to simulate multiple(10) sensors like these

to the labjack.  Ideally, we would want to use the actual sensors but unfortunate events have happened that prevented us from accessing gases.  Are there any tools that can be used to simulate a large amount of sensors that could be interfaced with the Labjack U6

I am not sure what you mean by "simulate" in this case?  If the actual sensor provides a 0-1V signal, you could just make a random number function in software that provides a random 0-1V value.
